After hours of observation, I discovered:
the Simon loves apples.
The Simon also enjoys listening to people 'shred' on guitar. (Steve Vai and Eddie Van Halen are his two favorite 'shredders')
The Simon is married.
The Simon speaks Cantonese and Mandarin
